Hotel Grimsborgir is a luxury hotel amid Iceland’s spectacular natural scenery. Its ideal location in the heart of the stunning Golden Circle route means some of the country’s most renowned attractions lie on the doorstep, from the roaring falls of Gullfoss to the 20m high spurts and bubbling mud pools of Strokkur and Great Geysir. It’s all done alongside luxury suites and Icelandic dining with the likes of Arctic char served in the cosy fireplace-adorned onsite restaurant, and days are wonderfully culminated under the psychedelic scatter of the Northern Lights in private hot tubs.

Eat

The perfect fuel for days of adventure ahead, the breakfast buffet at the Grimsborgir is wonderfully generous and includes freshly baked breads, pastries, cheese and even energy shots. Come evening, the exposed brick walls and fireplaces of the main restaurant provide a charming setting for the likes of Arctic char, Icelandic lobster and mountain lamb, and there’s an enormous terrace, when weather permits, for sunset dinners and a glass of wine chosen from the wine cellar's extensive collection.

Sleep

Luxury rooms even at their most simple level are pure Scandi-chic, featuring white wood-panelled walls and private terraces, and all guests have access to an outdoor Jacuzzi. Go one up, however, and you're greeted with enormous suites in hues of white and stunning dark wood floors, with four poster fur-strewn beds, fireplaces, patios with a barbecue grill and private hot tubs for optimum star gazing.

Do

Typically for Iceland, it's outside's scenery that commands most of the attention. Just moments from your hotel lies the UNESCO-listed Thingvellir National Park, best witnessed with a self-drive along the impressive Golden Circle, from the awe-inspiring Gullfoss waterfall to the azure geothermal bath of the Blue Lagoon. Horse riding tours and even snorkelling or diving in the crystal clear waters are other wonderful ways to witness Iceland's most arresting natural landscapes, or for the adventurous, head out quad biking, snowmobiling or glacier hiking. Most spectacular, though, is those revered Northern Lights, as they – with luck – cast their spell whilst you watch from below in your hot tub.
